Amazing Energy Balls

Ingredients
  • 2 cups of any nuts/seeds
  • ¾ cup shredded unsweetened coconut
  • 2 cups of Medjool dates, pitted
  • 2 tablespoons coconut oil
  • 1 scoop protein powder
  • 1 teaspoon sea salt
  • 1 teaspoon almond extract
  • Hemp seeds, cocoa powder or additional shredded coconut for coating (optional)
Instructions
  1. In a large food processor fitted with an “S” blade, or a blender, process the nuts and shredded coconut until crumbly. Add in the dates, coconut oil, almond extract, protein powder and sea salt and process again until a sticky batter is formed.
  2. Scoop a heaping tablespoon, then form small balls by rolling them between your hands. Roll them in coconut oil, hemp seeds, or cacoa powder (optional), then freeze for at least an hour on parchment lined baking sheets. These little guys can be stored in the fridge for up to two weeks, or in the freezer for an even longer shelf life.
