Paleo Cauliflower Chowder

Paleo Cauliflower Chowder
  • 1 head cauliflower, chopped
  • 3 garlic cloves, minced
  • 1 onion, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can of coconut milk
  • 2 tsp ground cumin
  • 2 tsp ground turmeric
  • 1 lb ground beef
  • Sea salt and freshly ground pepper
  • 1 tbsp coconut oil
  1. Steam the cauliflower, until it is easily chopped up, then set aside.
  2. Brown 1 lb of ground beef, then set aside.
  3. In a large saucepan, saute the onions, celery and garlic in the coconut oil (approx. 5 minutes, or until tender).
  4. Add the chopped cauliflower, ground beef, chicken broth, cumin, turmeric and coconut milk to the large saucepan with the sauteed vegetables.
  5. Bring to a boil, and then simmer for 15 minutes, or until the vegetables are tender.
  6. Season with salt and pepper to desired flavor. Enjoy!
