Recipe: Fall Medley

This recipe is a must add to your fall menu.  Credit goes to my sister in law, Raquel Hanquist, who first introduced this dish to me several years ago.  I fell in love and haven’t looked back since!


What you will need:


Sweet potatoes

Granny smith apples (or whatever kind you have in stock at home)

Oil of your choice, olive, coconut



Green onions

Red onions



Sausage of your choice, beef, polish, chicken, turkey, or none


Additional tip, add squash of any kind!


Peel and cut the sweet potatoes into small cubes (since they take a little longer to bake than the apple).  Peel and cut the apples into cubes.  Mix the sweet potatoes, apples (and squash if you have added any) and oil in a bowl until the sweet potatoes and apples are lightly covered.  Next add the seasonings of your choice!  I have listed many, but use what your taste buds like.  Mix everything together so that everything is coated evenly.


Next, preheat the oven to 350 degrees (since your oven literally takes just a few minutes to reach the desired temperature).


Final step before baking, add the sausage and nestle it down in the mixture of apples and sweet potatoes.  Leave the sausage whole at this point for everything to bake. (Or use none at all!!!)


Bake for 45-50 minutes or until sweet potatoes are soft.


Take the dish out, cut the sausage up into slices and mix everything together.  Dinner is finished!  Enjoy!
