Vegetarian Chili to Warm You From the Inside Out

This chili recipe is one that I have loved for over 10 years now! I saw it featured on Food Network and love that it contains a wide variety of vegetables. I have made a few adaptations to make it my own.

Vegetarian Chili to Warm You From the Inside Out

Ingredients
  • 2 Tbs grapeseed or coconut oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 Tbs chili powder
  • ½ tsp cumin
  • ½ tsp dried oregano
  • ¼ tsp cayenne
  • 1 medium sized green bell pepper, seeded & diced
  • 1 medium sized red bell pepper, seeded & diced
  • 1 medium sized zucchini, diced
  • 1 medium sized yellow squash, diced
  • ½ small bag frozen corn
  • 1 can stewed tomatoes (look for cartons instead of cans if you're concerned about BPA)
  • 1 can black beans, drained & rinsed
  • ¼ tsp salt
Instructions
  1. ​Heat oil in 4 quart pot over medium heat. Add onion, garlic and chili powder, saute for 5 mins.
  2. Add green and red peppers: saute 5 mins or until vegetables are tender.
  3. Add tomatoes; cook for 10 mins.
  4. Stir in corn, beans and salt. Cook for 10 more mins.
  5. Serve with sour cream and/or guacamole and organic corn chips.
